It is a well known fact that lactic acid bacteria are sensitive to environmental exposure and that their viability is easily affected during processing, storage and ingestion. The exposure to air, high temperature, moisture, high pressure or simply a reaction to other ingredients can easily cause a rapid decrease in the number of viable cells.

In addition, unless the live bacteria are well protected, the majority will be killed or damaged during ingestion from exposure to the low pH levels of stomach juice and bile acids in the human gastric tract. The traditional solution to address these problems is high and expensive overages.
